Ingredients:
- San Marzano Tomatoes (crushed-about 12 ounces)
- grape tomatoes cut in half
- onion
- pepperoni cut in to small pieces (less than an ounce from the salad bar at the grocer)
- Red and Yellow peppers
- green olives
- Italian herbs (penzeys spices)
- Rigatoni
This sauce is light but full of flavor thanks to the pepperoni and the olives. I'm rating it 8 out of 10!
Put all the ingredients in a large pot except the grape tomatoes (and the pasta of course). Let it simmer for about an hour. Add the grape tomatoes at the end.
Toss the sauce with rigatoni and serve with fresh grated parmesan cheese.
I had to have seconds!
